Spinach & Cheese Tartlets

Everyone has their go-to dishes, this one is my absolute favourite. Every single time I make it, I get rave reviews from my guests. It's easy, delicious and meat-free so even your vegetarian friends can indulge. Don't be confused by it being called a tartlet, it's my lazy girl take on a tartlet so it's fabulously easy.

Ingredients

Serves 6

1 Roll of Puff Pastry

125g Sundried Tomato Pesto

300g Swiss Chard Spinach

100g Grated Gouda Cheese

1/2 Tub of Creme Fraiche

1/2 Tub of Mascarpone

3 Spring Onions

1 Egg

Salt

Pepper

Method:

1. Pre-heat the oven to 180 degrees Celsius.

2. Sprinkle some flour on a clean surface. Roll out the puff pastry. Cut the pastry into 6 evenly sized rectangles.

3. Beat the egg in a cup. Brush the pastry all over with the beaten egg. For each rectangle fold all the edges over slightly to form a crust.

4. Place approximately 1 spoon of pesto in each rectangle and spread evenly.

5. Chop the spinach and spring onion, place in a bowl then season with salt and pepper.

6. Add the Gouda, Creme Fraiche and Mascarpone to the chopped ingredients and mix well.

7. Place some of the spinach mixture in each rectangle. Ensuring to heap it slightly.

8. Transfer the pastries onto a baking tray lined with baking paper.

9. Place in the oven and bake for approximately 45 minutes or until golden brown on the edges. Enjoy!
