The Breakfast Club Part II

Everyone knows that it's crucial to start your day with a good breakfast. The problem though, is that there are only so many exciting breakfasts one can make. Personally I'm more of an easy brunch girl, where I get to luxuriate and enjoy delightful food with fabulous company. Sadly, my schedule doesn't allow me to flourish everyday with long breakfasts that fade into the afternoon. So here are two of my favourite simple, do-able and Instagrammable breakfasts.

Vanilla French Toast With Bacon

It's a classic that I grew up making on special occasions but I have made one of my go-to's. It is incredibly easy, a great way to impress and the vanilla twist makes it extra delicious. Crispy bacon is always the best accompaniment for French Toasts if you ask me, but a dollop of rich mascarpone could be substituted in for vegetarians.

Ingredients:

Serves 2

4 Slices of bread (slightly stale is best)

3 Eggs

6 Rashers of Streaky Bacon

3 Tablespoons of Milk

1 Teaspoon Vanilla Essence

1/2 Orange (cut into quarters)

Golden Syrup

Butter

Method:

1. In a bowl crack the eggs, add the vanilla essence and milk then whisk until well combined.

2. Place the bacon in an ovenproof dish and grill in the oven until each side is slightly brown. Turn off the oven and leave in until ready to serve.

3. Cut the crusts off the bread (and into round circles if you desire). Dip each slice in the egg mixture until well covered.

4. Heat approximately two teaspoons of butter in a pan until bubbling. Place each slice in the pan and cook until golden brown on each side. (Depending on the size of your pan you may have to do 1-2 slices at a time)

5. Place 2 slices of the cooked french toast on a plate with 2 rashers of bacon. Serve with 2 of the orange quarters on top and drizzle with as much syrup as you would like. Snap it, post it to Instagram and Enjoy!

Egg on Toast:

Okay the name might be slightly deceptive - it's actually eggs on toast with fried mushrooms topped with fresh basil. But it's still super simple, amazingly tasty and people will think what a great breakfast even though you put in minimal effort.

Ingredients:

Serves 2

4 Slices of Toast

4 Eggs

1/2 Packet of White Button Mushrooms

Handful of Fresh Basil

1/2 Teaspoon dried mixed herbs

Butter

Salt

Pepper

Method:

1. Slice the mushrooms. Then melt 3 teaspoons of butter in a pan, toss in the mushrooms. Add salt, pepper and the mixed herbs. Fry until the mushrooms have a golden edge.

2. Butter the fresh toast and put on plates. (No instructions needed hopefully on how to make toast)

3. In a pan heat butter and cook the eggs until at the softness you desire. Place the eggs on the toast and cover with the mushrooms.

4. Roughly chop the basil and sprinkle liberally on the eggs to complete. Snap it, post it to Instagram and enjoy!
