Winter Spinach, Chicken & Sausage Salad

Everyone associates winter with steaming hot soups and crusty rolls straight from the oven. I love soup as much as the next person but sometimes I need something different to shake it up during the week. A warm salad with a bit of heat from chilies is the perfect way to beat the winter blues.
Ingredients
Serves 4

2 Chicken Breasts (on the bone)
1/2 Packet of Lamb Sausage
1 Packet Swiss Chard Spinach
1 Head of Broccoli
1 Avocado (Sliced)
1 Lemon Juice
2 Medium Chopped Chilies
4 Tablespoons Soy Sauce
1 Teaspoon Crushed Garlic
1/2 Tablespoon Butter
Olive Oil
Salt
Pepper
Chicken Seasoning
Method:
1. Pre-heat the oven to 180 degrees Celsius. Season the chicken with salt, pepper, chicken seasoning and olive oil. Place in an ovenproof dish and roast uncovered for approximately 40 minutes.
2. Heat a pan and fry the sausage on both sides for approximately 3 minutes. Remove from the pan and place on a cutting board. Chop the sausage into smaller pieces and place in bowl to be fried once more before serving.
3. Chop the head of broccoli into smaller pieces. In a small pot heat a tablespoon of olive oil, add the garlic, chilies, and broccoli. Stir while it cooks then add the soy sauce and a dash of pepper.
4. Heat the butter in pot and finish frying the sausage until cooked through.
4. Roughly shred the spinach, squeeze the juice of half a lemon on it, toss the spinach and place it on the serving dish. Top the spinach with the cooked sausage.
5. Once the chicken is cooked, remove from oven and while it is hot, using a knife and fork shred the chicken so it comes off the bone in smaller pieces. Place the shredded chicken on the spinach.
6. Add the cooked broccoli and finish off with slices of avocado.
7. Enjoy!
*For extra creaminess crumble feta or goat's cheese on top*
