I don't know if I'm the only person that sometimes shops with grandiose delusions about what I am going to make. I mean just last week I bought cubed beef in the hopes of whipping up a rustic french pie or something similarly impressive(ish) for some friends. That did not happen for a number of reasons the most pertinent one being that I am lazy and a rustic beef pie sounds great in theory but actually requires a bit of work. So instead of something traditional I whipped up this quick yet ridiculously tasty meal (using a couple of shortcuts) and it is perfect for lunch or dinner especially on a beautiful day.
Ingredients:
Serves 2-4

500g Cubed Beef (or 1 Pack Beef Goulash)
3/4 Packet of button mushrooms
1 Head of Broccoli
1/2 Red Onion
1 Cup of Sweet Sticky BBQ Marinade
3 Teaspoons of crushed garlic
1 Teaspoon Chopped Chili
2 Tablespoons of Sugar
2 Tablespoons of Balsamic Vinegar
3 Tablespoons Sweet Chili Sauce
2 Tablespoons Tomato Sauce
Olive Oil
Salt
Pepper
Steak & Chops Seasoning
Method:
1. Start off by tossing the beef in a plastic container (ensure that it is a container with a lid) and season with the salt, pepper and steak seasoning.
2. Add 2 teaspoons of garlic to the beef, followed by the chili, sweet chili sauce, tomato sauce and marinade. Close the container and shake vigorously to ensure all the meat is covered.
3. Slice the red onion and heat approximately 1 tablespoon of the olive oil in a medium saucepan.
4. Add the beef to the saucepan (with the marinade ensuring you scrape out all the contents from the container) and fry on a high heat initially for approximately 4 minutes, then turn down the heat and let it simmer for about 15 minutes or until beef is cooked through.
5. While the beef is simmering slice the mushrooms and chop the broccoli.
6. In a medium sized frying pan heat approximately 2 tablespoons of olive oil then toss in the mushrooms, and broccoli. Add the garlic, balsamic vinegar, salt and pepper. Fry until the broccoli has golden edges and is still slightly crunchy. (Cook for longer if you prefer softer broccoli)
7. On a plate dish out the broccoli and mushrooms and top with the beef.
Enjoy!
