Butternut & Chicken Bowl

Woolworths has the most delightful selection of pre-cut and peeled vegetables on offer as well as marinated chicken, meat and a plethora of other yummy goodies. Normally I would just throw whatever I've bought that day in the oven and make it according to the cooking instructions and eat. However, life is too short to have ordinary food everyday, sometimes all it takes is one or two extra ingredients to elevate your normal meals to simply fabulous!

Butternut & Chicken Bowl (serves 2-4)

Ingredients

1 Packet Woolworths Diced Sweet Potato

1 Packet Woolworths Diced Butternut

Sweet & Sticky BBQ Chicken Kebabs

1 Handful Wild Rocket

2 Discs Plain Feta

Olive Oil

Method:

1. Chop the sweet potato and butternut into slightly smaller chunks for even cooking. Place in an ovenproof dish, drizzle with olive oil and roast in an oven at 180 degrees Celsius for about 45 minutes or until cooked through.

2. Place the chicken kebabs in an ovenproof dish and cook according to the instructions on the packet.

3. When the chicken kebabs are cooked removed the chicken from the sticks using a knife and fork (as the chicken will still be hot).

4. Chop the feta discs into cubes. In a bowl toss enough rocket to cover the bottom, add approximately 4 tablespoons of the butternut and sweet potato roast (depending on the size of your bowl). Top with chicken from 2 of the kebabs and throw on about 1/4 of the feta.
