Fabulous Feta Stuffed Mushrooms

My mom is a lazy cook so she has a few go to dishes that she always makes. This mushroom dish is so delicious, I am yet to have someone eat this and not love it, but also so incredibly easy. It looks great to serve and a secret tip is that you can actually cook this in the microwave for about 5 minutes if you are super lazy, it just won’t get that golden brown edge that looks so good.

Ingredients:
Makes 4 Large Mushrooms
4 Large Mushrooms (white or brown doesn’t matter)
1 Tub Feta
Handful Basil
3 Tablespoons Olive Oil
1 Teaspoon Lemon Juice
Salt
Pepper
Herbs to Garnish
Method
Drain the feta discs from their liquid in the package and crumble into a bowl. Roughly chop the basil and toss on to the feta. Season with salt, pepper, the lemon juice and add the olive oil.’
Using your hands mix all the ingredients well. Take the mushrooms and stuff with the mixture until full.
Place in an oven at 180 degrees Celsius and bake for 10 minutes. Grill for 2 minutes just to get a slightly golden brown edge.
Place on serving dish, garnish with herbs and enjoy!
** To spice it up, add 2 tablespoons of red pepper pesto or basil pesto and get an extra kick of flavor**
