Creamy Pasta with Boerewors

I have never quite understood what the true difference between sausage and boerewors is. Woolworths differentiates and so do people when they talk about it, well whatever the difference is I have always loved eating it. Typically one thinks boerewors and immediately jumps to making boerie rolls or something equally mundane. You don't have to save boerie for the braai, it can be a part of your weekday meals like this divine pasta that is filling, hearty and a great way to use boerewors a little differently.

Ingredients (Serves 4):

3/4 Woolworths Spaghetti

1 Onion

1 Packet Woolworths Farmstyle Boerewors

1 packet of mushrooms

4 Tablespoons Butter/Margarine

1 Tablespoon Olive Oil

350-400ml milk

3 Tablespoons Plain Flour

2 Discs Plain Feta

Mixed herbs (dried)

Salt

Pepper

Paprika

Method:

1. Fill a medium sized pot about 3/4 of the way, add salt and olive oil. Leave on the stove until it boils, then add the pasta and cook until 'al dente' (slightly firm to the touch).

2.In a pan place the entire packet of boerewors in, uncut and cook until golden brown on one side.

3. When cooked, place the boerewors on a chopping board and cut into medium slices. Put in a bowl and put aside.

4. Chop the onion finely, and slice the mushrooms. In a large pan heat 2 tablespoons of the butter, add the onion and mushroom and cook on a medium heat until the onions are soft. When the onions are ready add the remainder of the butter and let it melt.

5. Once the butter has melted remove the pan from the heat add the flour and briskly whisky until the flour is combined in all the ingredients. Then slowly add the milk 50ml at a time, whisking in between so that there are no lumps of flour and it all combines to for a smooth paste. When the milk is fully integrated and there are no lumps (requires vigorous whisking) place the pan back on the heat.

6. While the mixture heats up, gently whisk until you can feel the sauce thicken.

7. Leave the sauce to simmer for approximately 5 minutes once it has thickened. Season with salt, pepper, herbs and paprika.

8. Whilst the sauce is simmering take the last tablespoon of butter and fry the boerewors slices until golden brown.

9. Add the cooked pasta to the sauce and mix until all the pasta is covered in sauce.

10. Serve the pasta in a bowl, top with some boerewors slices and crumble feta on top.

Enjoy!

**Pro Tip: If you warm the milk in the microwave until luke warm then the sauce will thicken faster.
